Shrimp Rotel Dip Recipe

There are a ton of cheesy dips out there to make. Trust me, I have made just about all of them as I LOVE CHEESE!

But for this recipe, I wanted to make it easy but unique.

I started with a well known classic and brought in a little seafood. This easy dip recipe came about it no time.

It’s just like your favorite rotel cheese dip recipe but with shrimp.

And it’s even easier to make as a slow cooker version!

Ingredients Needed

Velveeta cheese – This makes the creamiest dip. I haven’t tested it with shredded cheddar.

Rotel – Substitute a can of rotel tomatoes for diced tomatoes and chopped green chilies.

Sausage – I like to use hot pork sausage but use your favorite.

Shrimp – Raw salad shrimp (91-100 count) works the best. If using larger shrimp, cut into pieces.

How to Make Shrimp Rotel Dip

First: In a large skillet over medium heat, brown the sausage until no longer pink. Drain extra fat.

Second: Place the remaining ingredients in a crock pot.

Third: Cook on high for 2 hours or on low for 3-4 hours. Stirring occasionally.

Fourth: Reduce heat to warm and serve.

What to Serve with Shrimp Rotel Dip

  • tortilla chips
  • soft tortillas
  • toasted slices of bread
  • corn chips
  • fresh vegetables (cucumbers, bell peppers, cauliflower, carrot sticks)

How long does it last?

If kept on warm it will last a for a few hours. If you happen to have any leftover, cool it completely. Store in an airtight container in the refrigerator for up to 3 days.

Best Way to Reheat It

Reheat any leftover shrimp dip in a small saucepan on the stove on low or place it in a small crockpot and turn on low until heated through.

Be sure to stir often to remove any lumps and prevent burning.

Tapas Tips & Tricks

  • Substitute ground turkey or ground beef for the sausage.
  • Be sure to use raw salad shrimp. If they are cooked before adding they will become tough.
  • Stir in some taco seasoning, Cajun seasoning, ground cumin, or red pepper flakes for a little kick!
  • Substitute a mixture of cream cheese and fresh grated cheddar cheese for the Velveeta.
  • Make it spicier by using pickled or fresh jalapeno peppers instead of green chiles.
  • Sprinkle in garlic powder for extra kick.
  • For a more tangy dip, stir in sour cream right before serving.

Ingredients

  • 32 ounces Velveeta diced or in large chunks
  • 1 10.5 ounce can Rotel, not drained
  • 8 ounces hot pork sausage ground or crumbled
  • 2 cups salad shrimp roughly 9-10 ounces
