Hawaiian Roll Breakfast Sliders

These Hawaiian Roll Breakfast Sliders are perfect for busy weekday mornings to lazy weekend brunches with friends. I just love the combination of sweet, buttery Hawaiian rolls and savory breakfast foods that makes these sliders work for any occasion.

Even though I am an early riser (shocking I know!) I do like to be lazy on weekends. And that includes my breakfast or brunch plans.

My husband and I love finding new, delicious breakfast spots or diners on the weekend, usually before a tennis match. And I’m always down for a “sandwich” of some sort. Mostly because it feels like lunch but with all those yummy “breakfast” foods like bacon and eggs.

That’s why I can’t get enough of these breakfast sliders!

They are everything I love about a casual brunch but in an easy to make slider that fits any occasion. Perfect for bridal showers and brunches, they are super easy for tennis matches and even easier for those busy weekday mornings.

From meal prepping for the week or hosting a crowd, these sliders deliver big flavor with minimal effort. Just prep them ahead of time and pop them in the oven when you get hungry!

Ingredient Notes

  • Rolls – Hawaiian rolls are my favorite for the sweetness but feel free to use the rolls you prefer. The Pepperidge Farms butter slider buns are nice because they are not “connected” and look like true mini burgers. Depending on how many are in the pack you can add 1-2 buns and spread out the other ingredients.
  • Bacon – I like to use center cut bacon because there is less fat but use your favorite. Just be sure to cook it and chop it small so it’s easy to sprinkle on the eggs.
  • Ham – Plain ham is great or use Black Forest or even maple glazed deli ham.
  • Cheese – American cheese melts the best for me but you can also use cheddar cheese. And you don’t have to use slices, you can use shredded cheese if you need to. I prefer to shred or grate my own so it melts easier.

How To Make Breakfast Sliders

  1. Preheat the oven to 350F and line a baking sheet with parchment paper. Scramble the beaten eggs in a nonstick pan over medium heat. Don’t over cook! Remove, season with salt and pepper if you like, and set aside.

  1. Slice the buns in half horizontally to separate the tops and bottoms. Place the bottoms on the baking sheet and spread 6 slices of cheese on them.

  1. Top with the sliced ham and add the remaining 6 slices of cheese. Top with the scrambled eggs and chopped bacon. Be sure to try and get to the edges as best you can.

  1. Add the top buns, brush with the melted butter, and sprinkle with sesame seeds. Cover loosely with foil and bake for 10 minutes. Uncover and bake another 5-7 minutes or until the tops are golden brown and the cheese is melted. Remove and serve!

Serving Suggestions

These are delicious all on their own as they are a “complete” breakfast with meat, bread, and eggs. But feel free to serve them along with some other brunch items like fresh fruit.

Storage

If you happen to have any leftovers, wrap them tightly and store in the refrigerator for up to 2 days.

Reheat in the oven, toaster oven, or air fryer at 325F until heated through. I like to individually wrap mine in foil to keep them from drying out while they are reheating.

If you want to make these ahead of time and freeze them you can! Just cook and cool them completely. Then wrap individually in plastic wrap and store in a freezer safe container for up to 2 months. When ready to eat, reheat them as usual.

Variations

Breakfast is something that you can change up easily. Here are few ideas to make these your own.

  • Swap out the ham for cooked pork sausage patties, breakfast links, or your favorite breakfast sausage.
  • Add some cooked chorizo, pepper jack cheese, and some chopped green chilies. Serve with salsa for a Southwest feel.
  • Make them vegetarian and leave off the meat. Substitute in some spinach and sliced tomato, and add some meat free protein substitutes like black bean patties.
  • Fancy them up a bit with some caramelized onions, some brie or Swiss cheese, and some honey baked ham. Add a little syrup to the melted butter mixture.

FAQs

How do you cut Hawaiian rolls for sliders?

These rolls are super soft and they are usually connected together in the package. I like to use a serrated knife and cut through them horizontally to separate the tops from the bottoms. But, I try to keep all the tops connected and all the bottoms connected. It makes them easier to layer the ingredients on top and assemble them when done.

How can I keep them from getting soggy?

If your sliders are getting too soggy on the bottom, you can decrease the amount of marinade or butter topping you are brushing on top of them. You can also toast the roll bottoms before you layer the ingredients on top. I found that cooking them on a baking sheet and not in a deep 9×13 pan helps. The juices from the ingredients can move away from the buns when they bake if they are on a sheet.

How many sliders do I make per person?

If you are using the Hawaiian rolls, they tend to be on the smaller size so I like to plan 1-2 sliders per person. If you use individual buns, you can get away with 1 per person since they are a little larger.

What goes with breakfast sliders?

That’s the best part of serving these! You can make them from breakfast (duh) but they make a great brunch or lunch dish too. Because of this, you can serve fruit and other breakfast foods, or make them more “lunch like” and serve chips and dip, or french fries and tater tots.

Tapas Tips & Tricks

  • You can assemble the sliders the night before, wrap tightly and store in the fridge. Then in the morning, just pull them out and bake as usual. You might need to add 2-3 minutes to the cooking time if they are really cold.
  • Add some of your favorite spice blends to the scrambled eggs when cooking them. I love a little everything bagel seasoning or taco seasoning if I’m using chorizo.
  • Put cheese on top and bottom of the ingredients to help “seal” them all together and keep the rolls from getting soggy.
  • This recipe is easily doubled for a large crowd!

Ingredients

  • 15 slider buns
  • 12 large eggs beaten
  • 10 slices bacon cooked, chopped
  • 12 slices American cheese
  • 15 slices deli ham
  • 2 tbsp butter melted
  • 1 tsp sesame seeds

Instructions

  • Preheat the oven to 350°F (175°C).
  • Lightly grease a baking sheet or line it with parchment paper.
  • In a nonstick skillet over medium heat, cook the beaten eggs until softly scrambled. Remove from heat — don’t overcook, as they’ll finish in the oven.
  • Slice the sheet of slider buns in half horizontally, keeping all the tops together and all the bottoms connected if possible.
  • Place the bottom half of the buns on the baking sheet.
  • Layer cheese slices across the bottom buns
  • Then add ham slices, eggs and bacon on top.
  • Place the top buns on top of the eggs and bacon layer.
  • Brush the tops of the buns generously with melted butter and sprinkle with sesame seeds.
  • Cover loosely with foil and bake for 10 minutes.
  • Uncover and bake an additional 5–7 minutes, until the tops are golden and the cheese is melted.
  • Remove from the oven and slice into individual sliders. Serve warm.
