So when I started making more tacos with chicken instead of beef, I wanted a blend made specifically for them. And not just use my regular Chicken Seasoning or my classic Taco Seasoning.

This one borrows the best of both! The best of a good chicken rub with the cumin and chili powder that make Mexican food taste the way it should.

It is the seasoning I use in my Air Fryer Chicken Quesadilla, and it works as an easy swap in Santa Fe Soup, Crockpot Taco Casserole, and Mexican Casserole whenever you want chicken instead of beef.

Store-bought packets always have those extra anti-clumping ingredients I would rather skip, so homemade is the only way I make taco seasoning anymore.

What Makes This Different From Regular Taco Seasoning?

Regular taco seasoning is built around ground beef – heavier on chili powder and cumin with a flavor profile designed to stand up to fattier meat.

Chicken is milder and leaner, so a seasoning built specifically for it needs a different balance. This blend leans on garlic powder and onion powder for the base, then layers in smoked paprika, cumin, and chili powder for those classic Mexican flavors.

It is essentially a meeting point between my Chicken Seasoning and my classic Taco Seasoning. It’s built from the ground up for chicken tacos rather than adapted from a beef recipe after the fact.

Can You Use Regular Taco Seasoning on Chicken?

Yes, you can, and plenty of people do. Regular taco seasoning will not ruin your chicken tacos. But because it is formulated for beef, the flavor balance tends to be heavier and a little less suited to chicken’s milder flavor.

This chicken-specific mix gives you a more balanced flavor without needing to adjust the seasoning amount. And you won’t guess how it will taste on something other than ground beef.

Ingredient Notes

Smoked paprika – gives the blend a deep color and a subtle smoky flavor. Regular paprika works fine if that is what you have, but the smoked version adds a little something extra.

Garlic powder – use granulated garlic or garlic powder, just not fresh garlic, which will throw off the texture and shorten the shelf life of the blend.

Onion powder – onion powder or onion flakes both work well here and add to the base that makes this taste like a proper seasoning blend instead of just chili powder and salt.

Cumin – an absolute must in any taco seasoning. It is the spice that makes Mexican-style dishes taste like actual Mexican-style dishes.

Chili powder – adds punch and a touch of smokiness that rounds out the smoked paprika.

Oregano – regular oregano works great, but Mexican oregano is worth looking for if you can find it. The flavor is noticeably different and adds an authentic touch.

Salt – kosher salt is the go-to here. If you only have table salt, add it a little at a time since the saltiness comes through more intensely than with kosher salt.

Red pepper flakes – adds a little heat. Swap in a pinch of cayenne pepper if that is what you have instead.

How To Use It

Storage

Store this seasoning in an airtight container in a cool, dark place and it will last up to six months. A mason jar works great and helps it stay fresh longer than a flimsy bag.


Variations

Want more heat? Add extra cayenne pepper or red pepper flakes for a spicier version.

Want a smokier flavor? Add a little more cumin and chili powder, or swap in some chipotle chili powder alongside the smoked paprika.
