Air Fryer Sweet Potato Wedges

These air fryer sweet potato wedges are a delicious snack, appetizer, or side dish. Made with simple ingredients and ready in less than 30 minutes, I love these with a spicy mayo dipping sauce as a mid-afternoon treat.

If you are a fan of sweet potatoes, you are going to love these wedges! They are quick and easy, and so much better than deep frying and they’re ready in less than 25 minutes.

Serve them as a snack, an appetizer, or even a side dish! You’re going to love how light and fluffy they are on the inside, and perfectly seasoned and crispy on the outside.

Ingredient Notes

  • Potatoes – Use raw sweet potatoes that look heavy for their size and very few blemishes on the skin. Cut into wedges or strips.
  • Cornstarch – Don’t forget this because it helps to draw the moisture out of the potatoes and helps them to get crispy.
  • Spices – This recipe uses the basics like salt, pepper, garlic and onion powder, paprika, and red pepper flakes. Use your own seasonings if you prefer. I love to use my homemade fry seasoning since it has most of these spices already in it.
  • Oil – The air fryer makes it to where you don’t have to use a lot of oil but you need a little to get the spices to stick to the potatoes and keep them from sticking to the basket. Use vegetable oil avocado oil, olive oil, or a cooking spray.

How To Make Air Fryer Sweet Potato Wedges

  1. Be sure to scrub and dry the sweet potatoes first since we’re leaving the skin on. Trim the ends off and then slice sweet potatoes in half longways. The cut into wedges.

  1. Place the sweet potatoes into a bowl with oil. Toss to fully coat the sweet potatoes. Sprinkle in the cornstarch, spices, salt, and pepper. Toss again to coat.

  1. Oil the bottom of the air fryer with a pastry brush or use nonstick spray. Add the wedges in a single layer. Air fry them at 400° F for 7 to 8 minutes.

  1. Flip the wedges over. Dab a little extra oil on the potatoes. Cook for an another 8 to 9 minutes or until they are tender on the inside and crispy on the outside.

Serving Suggestions

Just like with all my french fry recipes, I love a good dipping sauce. And this one is no exception. I use it on so many things! A few of my favorite ones are these sweet potato fries, buffalo fries, garlic parm fries, and loaded cheese fries.

Storage & Reheating

You can keep the sweet potatoes in the fridge for up to 3 days. Just be sure they are sealed tightly. They will get softer once cooled but don’t worry!

Reheat them in the air fryer at 375F for 3-5 minutes or until crispy again. You can also use the oven at 400F.

Variations

  • Make them sweet by eliminating the onion and garlic powder and substitute in 1/4 teaspoon cinnamon and a little brown sugar.
  • Make them smoky by using smoked paprika and chipotle chili powder. If you like them a little spicier, add an extra ⅛ teaspoon of cayenne pepper.
  • Try more fragrant herbs like rosemary, thyme, and sage.
  • Really switch it up by tossing the cooked wedges with fresh minced garlic and a sprinkle of parmesan cheese.

How long does it take to air fry sweet potato wedges?

Depending on how large they are, and the model of air fryer, it can take anywhere from 15-20 minutes.

Why are my wedges soggy and not crispy?

There can be a few reasons why. First, make sure you pat them dry and coat them with cornstarch. You can also soak them for up to 60 minutes in cold water to remove any excess starch. Second, be sure to leave space between the wedges when cooking so the air can circulate fully.

Can I use regular potatoes?

You absolutely can! You might need to adjust the cooking times as white potatoes cook quicker than sweet potatoes.

Can I make these in the oven?

If you don’t have an air fryer, or want to make a large batch at once, you can oven bake these. Spread them on a line baking sheet and bake at 425F for 25-35 minutes or until crispy and cooked through. Be sure to flip them half way thru.

How do I pick a good sweet potato?

Pick one that feels heavy for it’s size, is pretty uniform in shape, and has smooth skin with very few nicks or bruises. I like to pick longer potatoes that have the same width most of the way down the center. This makes for evenly shaped wedges when cutting.

What’s the best way to cut the potatoes?

I like to start by trimming the small, tapered ends off the potato. Then I slice it in half all the way through. Lay the flat side down and cut into wedges. Repeat with the other half. You can also choose to leave the skin on or you can peel them.

Ingredients

  • 2-3 medium sweet potatoes roughly 1 ½ pounds
  • 2 tablespoons avocado oil divided
  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon paprika
  • ¼ teaspoon red pepper flakes
  • 1 tablespoon parsley chopped, for garnish

Instructions

  • Wash and dry the sweet potatoes. Cut the ends off the sweet potatoes.
  • Cut the sweet potatoes in half longways and cut them into wedges.
  • Place the sweet potatoes into a bowl with 1 tablespoon avocado oil. Toss until the sweet potatoes are fully coated.
  • To the bowl add the cornstarch, salt, black pepper, onion powder, garlic powder, paprika, and red pepper flakes. Toss until the sweet potatoes are fully coated.
  • Oil the bottom of the air fryer with a pastry brush.
  • Place the sweet potatoes evenly in the air fryer.
  • Use the pastry brush to dab oil onto the sweet potatoes.
  • Cook at 400° F for 8 minutes. Flip the wedges over. Dab oil on the potatoes.
  • Cook for an additional 7-9 minutes or until the sweet potatoes are tender and crispy.
  • If you have two racks in your air fryer, it may take a bit longer.
  • Garnish with chopped parsley if you like.
