Blooming Quesadilla Ring
If you love quesadillas you are going to flip over this new way to eat them! Forget the flat ones you are used to, these tortilla cones are stuffed with chicken, cheese, and other favorites, and baked in a pretty ring! Perfect for tucking some salsa or guacamole in the middle.

Great for a crowd! Just like these walking tacos, but these are way more fun!
Ok, you might say they are more like regular chicken quesadillas, just rolled in a cone, but whatever you call them, call them delicious. Because they totally are!
I started making these for our tennis matches and they are a big hit. That’s because pretty much everyone I know likes a quesadilla (or any Mexican food for that matter) and they are just the right portion. Just don’t tell anyone that I eat three or four of them.

Ingredient Notes
- Chicken – Use cooked chicken like a rotisserie chicken or leftover chicken. You can dice it or shred it if you like. Just make it so it’s bite-size so it won’t pull out all the other ingredients when you bite into it.
- Seasoning – Your favorite taco seasoning. Substitute a Southwest seasoning, chicken taco seasoning, or a fajita seasoning.
- Vegetables – This is where you can change things up. I love corn, red onion, and bell pepper but you can use refried beans, black beans, and green onions too.
- Salsa – Use as a dipping sauce or swap this out for salsa verde, guacamole, or even queso blanco.
- Cheese – Use a melty cheese like cheddar, Monterey Jack, and buy the block and grate it yourself. It melts better. You can also use a nacho cheese sauce too!
- Tortillas – You can use corn or flour tortillas but I have noticed that they corn tortillas tear easily when wrapping and can break apart when you bake them. Be sure to use the 6 inch or taco size so they don’t get too big.

How To Make A Blooming Quesadilla Ring

- Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper.

- Mix in a large bowl shredded chicken, taco seasoning, corn, red bell pepper, red onion, green onion, salsa, and half the cheese.

- Cut each tortilla in half. Place about 2 tablespoons of the chicken mixture on each of the halves. Starting from one corner, roll into a cone or small burrito. Place on the lines baking sheet and continue with the remaining tortillas.

- Arrange the rolled tortillas in a circle with the pointy ends facing and overlap slightly. Sprinkle the rest of the cheese on top and bake. Bake for 18–20 minutes, or until tortillas are golden brown and the cheese is melted.
- Remove from oven and sprinkle with chopped green onions, cilantro or parsley if desired. Serve with salsa, guacamole, or sour cream in the center of the ring for dipping.

Storage & Reheating
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven at 180°C (350°F) for 10–12 minutes or until heated through. Avoid microwaving to keep the tortillas crispy.
Prep Ahead & Freezing
You can assemble the quesadilla triangles and refrigerate them for up to 6 hours before baking. Then pull the baking sheet out, add more cheese on the top, and bake as usual.

Serving Suggestions
This quesadilla ring is basically rolled tacos served in a circle with some dipping sauce in the middle. But you can make these the base for a fun taco bar too.
Around the ring, add bowls of salsa, guacamole, street corn, queso dip, shredded lettuce, diced tomatoes, black olives, etc.
Then let people put them on a plate and all their favorite toppings!

Tapas Tips & Tricks
- Use a pizza cutter to quickly cut tortillas. Lay them all out and evenly portion the filling out before you start rolling if you have the counter space.
- For crispier tortillas, brush the tops lightly with olive oil before baking.
- Shred your own cheese from a block instead of using pre-shredded cheeses. They melt better and taste better too.
- Put out extra napkins because these are delicious but can get a little messy.

Ingredients
- 2 ½ cups shredded cooked chicken
- 1 ounce taco seasoning same as 1 packet
- 1 cup canned corn drained
- 1 medium red bell pepper chopped
- 1 small red onion chopped
- 1 cup salsa
- 2 green onions chopped (for garnishing)
- 3 cups shredded cheddar cheese
- 20 tortillas 6-inch or taco size
Instructions
- Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper.
- Mix in a large bowl shredded chicken, taco seasoning, corn, red bell pepper, red onion, green onion, salsa, and 1 ½ cups cheddar cheese until combined.
- Cut each tortilla in half.
- Place about 2 tablespoons of the filling on one half of the tortilla (the straight edge side).
- Fold into a triangle (like a mini quesadilla) and press lightly to seal.
- On the prepared baking sheet, arrange the triangle quesadillas in a circle with the pointed ends facing inward, overlapping slightly.
- Continue with all the filled tortilla triangles until you’ve formed a full ring.
- Sprinkle the rest of the cheddar cheese on top if desired.
- Bake in preheated oven for 18–20 minutes, or until tortillas are golden brown and the cheese is melted and bubbly.
