Baked Brie with Pecans
If you’re looking for a party appetizer that’ll make people lose their minds, this baked brie with pecans is it. I’m talking creamy, melty brie cheese layered with a sticky sweet jam with bacon, pecans, and a splash of dark rum. Yeah, it’s as good as it sounds!

I love the holidays! It gives me a reason to make more party foods and appetizers and just graze. Full meals with main dishes, sides, salads, etc go by the wayside and a charcuterie board takes their place. My favorite way to eat!!
It’s always easy to find something to put on my grazing platter. I usually grab a few different crackers from the pantry and a dip and some veggies from the fridge. When I want to jazz it up a little, like on a Friday night, I love to bake some brie.
This bacon pecan baked brie is super creamy and flavorful. The sweetness of the honey pairs perfectly with the salty bacon and buttery pecans. If you choose to add a splash of dark rum, it warms it even more!

Ingredient Notes
- Cheese – Use the 8 ounce round Brie cheese. The one that’s around 4 inches across is perfect. A triple cream brie is my favorite!
- Bacon – I like to use thick cut bacon, but use what you have. Just chop fine after you cook it.
- Nuts – Toasted pecans are perfect or you can substitute almonds or walnuts.
- Rum – This is totally optional and adds a little extra flavor. Swap this out for apple cider or even water.

How To Make Baked Brie with Pecans

- Cook the bacon in a skillet over medium heat until the fat is rendered out. Drain and chop into small pieces.

- In a small bowl, combine the brown sugar, chopped pecans, rum, and honey.

- Fold in the chopped bacon and mix into a jam. Preheat oven to 350F.

- Cut the brie cheese in half across the middle. Place half the pecan topping onto one half, cut side up.

- Cover with the other half, cut side down. Top with the rest of the bacon pecan jam.

- Place in a baking dish lined with parchment paper. Cover and bake in 350F oven for 20-25 minutes or until the cheese is melted. Remove and serve.

Storage
Store any leftover brie in an airtight container, in the refrigerator, for 2-3 days. You can easily reheat it in the oven, at 350F, until warmed through and melted again.
I love taking the leftovers and smashing them in a small dish. They make a great topping for toast or waffles in the morning!

If you can’t find a brie that you like, try a camembert cheese.
Yes, you can! It gets very soft when you bake the brie so it will be easy to cut through.
If you leave it in the baking dish, it will stay gooey for 15-20 minutes. Removing it to a platter it will cool much faster. If it does, just pick up the parchment paper and transfer it back to the dish and pop in the oven again.

Ingredients
- 8 ounces brie cheese
- 5 slices bacon
- ⅔ cup pecans
- 2 tablespoons dark rum
- ¼ cup honey
- 3 tablespoons brown sugar
Instructions
- Preheat oven to 350 F.
- Cook bacon slices until crisp, chop fine, and set aside.
- Finely chop pecans and set aside.
- In a medium size bowl, mix together chopped pecans, honey, rum, and brown sugar.
- Add chopped bacon and stir until the mixture is combined.
- Cut the brie round in half horizontally with a sharp knife. Lay with cut sides up on a piece of parchment paper.
- Spoon half of the pecan mixture onto one side of the brie cheese.
- Place the other half of brie cheese on top (cut side down like a sandwich) and spoon the rest of the mixture on top of the brie.
- Lift up the parchment paper, by the corners so you don't spill the jam) and place it into the baking dish or on a baking sheet.
- Bake at 350 for about 20-25 minutes until the brie is melted and bubbly.
