Mini Pancake Skewers
Whip up a batch of these mini pancake skewers and watch everyone rush to the breakfast table. They are super easy to make and everyone can add their favorite fruits, jams, and toppings.

When my boys were younger, trying to get them to eat breakfast before school was a hassle. Not only did they not want to get up, but trying to get them dressed, find all their school stuff, and get them to eat breakfast was a pain!
I felt like I was always rushing! I tried everything, from prepping the night before, to getting up super early to make all their favorites. Along comes these pancake skewers.
The boys already loved pancakes, and making small ones so they could stack them was fun too. And as much as I tried, they would ignore the fruit on their plate and reach for more syrup.
But give them something they could assemble themselves, or that they could make their own, and they are all for it. And not only fruit, you can make them sweet or savory by adding small sausage patties, bacon, or even slices of country ham.
You can even use store bought pancake mix instead of making the batter from scratch to make prep even easier. The hardest part is trying to figure out what fruit to layer in between and what other fun toppings you can use.

Ingredient Notes
- Flour – Use all purpose flour to make your pancake batter. I haven’t tested this with alternative or gluten free flours.
- Milk – I like to use whole milk because it makes a richer tasting pancake.
- Vanilla extract – This only enhances the flavor. If I am using blueberries or cherries I like to use almond extract instead.
- Fruit – Sliced strawberries and bananas are my favorite! But you can use blueberries, blackberries, grapes, pineapple, raspberries, or your favorite melon.
- Additional toppings – Maple syrup, chocolate sauce, peanut butter, whipped cream, Nutella, powdered sugar, mini chocolate chips, nuts.

How To Make Pancake Skewers

- Whisk together the whole milk, melted butter, eggs and vanilla in a large mixing bowl.

- Add the baking soda, granulated sugar, and flour. Gently stir until the flour is all mixed in.

- Heat a nonstick pan over medium heat for a few minutes. Once the pan is hot, drop 1/2 tablespoon dollops of batter into the pan. Cook your pancakes for 1-2 minutes per side, or until golden brown.

- Remove, cool slightly, and stack on a toothpicks with your favorite fruit like sliced strawberries and bananas, spreads, or other breakfast favorites.

Serving Suggestions
These are perfect for brunches, bridal and baby showers, Mother’s Day, Easter, and even Father’s Day. Really anytime you might serve breakfast foods and want to keep it fun.
When you want to serve them, you can assemble the skewers up to an hour ahead of time. Just be sure to keep them tightly covered. I like to put them on paper towels just in case the fruit juices leak out.

- Lemon curd and blueberries
- Strawberries and bananas
- Nutella and whipped cream
- Peanut butter and chocolate chips
- Strawberry sauce and marshmallow fluff
- Peanut butter, banana, and marshmallows
Storage & Reheating
You can make make the pancakes ahead of time and store them in the fridge for up to a week. Just be sure they are stored in an airtight container.
Reheat the pancakes in the microwave for 10-20 seconds or in a toaster oven until warmed through.
You can also freeze the pancakes for 2 months. You don’t have to thaw them to reheat them. Just add about 10 seconds on the to the time.

Tips For Cooking Pancakes
Right off the bat, just know that the first 1-2 pancakes might not turn out exactly right. I just eat them!
When the pan is good and ready there are a few things you can do to make perfect pancakes.
- Don’t over mix the batter. It’s ok to have a few lumps in there. If you over mix, they will get chewy.
- Pour the batter on the pan and don’t move them. When the edges start to bubble, get ready. As soon as the bubbles in the center pop and the hole stays open, you are ready to flip.
- Get your spatula under the whole pancake, so you don’t drip the batter, and flip in one motion. And only flip them once. If you keep flipping, they will get flat.
- Once you take them off the pan, place on a baking sheet (under some foil) and keep in the oven at 175F to stay warm while you are making the rest of the pancakes.

Tapas Tips & Tricks
- I like to use my cast iron skillet to make them but if you have an electric griddle, you can make a bunch at one time.
- Use your favorite pancake recipe or buy pancake mix at the store.
- Small pancakes cook very quickly, so keep an eye on them.
- To keep the size the same, you can use a squeeze bottle, a piping bag, or a small ice cream scoop for the batter.
- These are fun to make with mini waffles too!

Notes
- Layer in your favorite fruits, you don’t have to use just strawberries and bananas.
- Make ahead of time and reheat when ready!
- Stack all the pancakes and place all your favorite fruits in bowls and let everyone assemble their own skewers.
