Sour Cream Pasta

Sour Cream Pasta is a light, creamy side dish with tender noodles coated in a tangy sour cream sauce, with sweet onion and tender spinach. It’s rich enough for dinner but light enough for lunch, and you can top it with grilled chicken or shrimp to make it a full meal. I eat pasta for breakfast. This isn’t a confession, it’s just information. And it’s almost always red sauce, because red sauce is correct.

My husband disagrees. He wants garlic and olive oil, or something light and creamy, or basically anything that hasn’t met a tomato. We’ve been having this conversation for years and neither of us is backing down.

So this is what I make when I’m feeling generous, or when he’s been gone for work and he needs a welcome home dinner.

It’s a light, tangy sour cream sauce clinging to every noodle, with sweet onion and tender spinach folded through. It takes under 20 minutes, uses stuff you already have, and it’s flexible enough to be lunch, a side, or a whole dinner if you throw some grilled chicken or shrimp on top.

Ingredient Notes

Pasta – Small shapes like shells, ziti, or penne work best because the sauce actually catches in them. Long noodles just let it slide off and pool at the bottom of the bowl, which helps nobody.

Sour Cream – Regular gives you the richest sauce. Low fat and fat free work, and plain Greek yogurt subs in fine. Whatever you use, it goes in over gentle heat, because sour cream gets grainy when you rush it.

Spinach – Fresh has the best texture and wilts in about a minute. Frozen works if you thaw and squeeze out every bit of water first. Wet spinach will water down your sauce and you’ll be sad about it.

Red Pepper Flakes – Just enough to keep the sauce from being plain and one note. Leave them out if you’re feeding people who consider black pepper spicy. I have a few of these in my family too.

Pasta Water – Save more than you think you need. It’s starchy, it’s magic, and it’s the difference between a creamy sauce and a broken one.

How To Make Sour Cream Pasta

  1. Cook the pasta in salted water until al dente. Set it aside and save 1 cup of the pasta water.

  1. In a large skillet over medium heat, melt the butter. Add the onion and cook until soft. Add the garlic and red pepper flakes and cook 1 to 2 minutes more, until fragrant.

  1. Add the fresh spinach and stir gently until it’s mostly wilted. Push the spinach and onion to one side of the pan. Add the sour cream to the empty side and stir to warm it, then slowly add the milk and stir until smooth. Fold everything together until the sauce comes together. Taste and season with salt and pepper.

  1. Add the pasta and stir to coat. If the sauce clumps or looks like it’s separating, add pasta water a splash at a time until it smooths out. Take the pan off the heat and serve warm, garnished with parsley, Parmesan, and more red pepper flakes.

Storage & Reheating

Best Fresh: This is at its best straight out of the pan, which is convenient since it only takes 20 minutes.

Refrigerator: Cool completely and store in an airtight container for up to 3 days.

Reheat: Stovetop over low heat is the best method. Microwave works in 30 second bursts if you’re in a hurry. Either way, add 1 to 2 tablespoons of milk (or hot water or broth) to loosen it back up, because the pasta will have absorbed the sauce overnight and turned it into paste.

Don’t Freeze: The sauce separates and goes grainy. It takes 20 minutes to make fresh, so freezing it is solving a problem you don’t have.

Variations

Different Seasoning: Switch the whole flavor with my Homemade Cajun Seasoning, Taco Seasoning, or Italian Seasoning.

Add Protein: Grilled chicken, shrimp, or sliced steak turns this from a side into dinner.

More Vegetables: Asparagus, broccoli, peas, or sliced mushrooms all work here.

Skip the Heat: Leave out the red pepper flakes for a milder, kid-friendly version.

Extra Cheesy: Stir in grated Parmesan at the end for a richer sauce.

A Restaurant Trick for Better Pasta

I learned this cooking in my parents’ restaurant and it changed how I make pasta forever.

Cook your pasta to about 1 to 2 minutes before al dente, using a pot with a built in strainer. Pull the strainer up, set the noodles aside, and leave the hot water in the pot over medium heat.

Now make your sauce. When it’s exactly how you want it, dunk the pasta back into that hot water to finish cooking, then pull it straight out and into the sauce pan.

Here’s why this works: the pasta is still coated in starch, so the sauce grips it instead of sliding off. And because you never fully drained it, a little starchy water comes along for the ride. You might not need to add any extra pasta water at all.

And if you do want it thinner, the water is right there, still hot, sitting next to your pan.

Why is my sour cream sauce grainy?

Too much heat. Sour cream curdles when it gets too hot, so keep the pan at medium or medium low and warm it gently instead of letting it bubble.

Can I use Greek yogurt instead of sour cream?

How do I fix a sauce that’s to thick?

Ingredients

  • 8 ounces pasta noodles reserve ¼ cup pasta water for later
  • 2 tablespoons butter
  • ½ cup onion finely chopped
  • 6 ounces fresh spinach
  • 3 cloves garlic minced
  • 1 cup sour cream
  • cup milk
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon red pepper flakes

Instructions

  • Cook the pasta in salted water, according to the package instructions, until al dente. Remove from water and set aside. Save 1 cup of the pasta water for making the sauce. This can be done while cooking the onion and spinach, or ahead of time.
  • In a large skillet over medium heat, melt the butter. Add the onion and cook until soft and translucent.
  • Add the garlic and red pepper flakes. Cook 1-2 more minutes until the garlic is fragrant.
  • Add the fresh spinach, cook while stirring gently, until the spinach is mostly wilted.
  • Move the spinach and onion mixture to one side of the pan and add the sour cream.
  • Stir on that side of the pan to warm the sour cream and get it smooth. Slowly add the milk to the sour cream and stir to mix.
  • Slowly incorporate the spinach and onion mixture until the sauce comes together. Season with salt and pepper to taste.
  • Add the pasta to the pan and stir to coat the noodles with the sauce. If the sauce is clumping or separating, slowly add the pasta water and stir to combine.
  • Remove the pan from the heat and serve warm. Garnish with fresh chopped parsley, grated parmesan, more red pepper flakes
