Classic Meatloaf Recipe

The last time I made this, my husband said it was better than his mom’s.

I want to be clear that I did not ask him to say that. I didn’t fish for it. He volunteered that information at the dinner table like a man who hadn’t fully considered the consequences, and I have been thinking about it ever since.

Meatloaf gets treated like the boring option, and I don’t accept that. This one’s tender and savory with a sweet tangy glaze that caramelizes on top.

It takes me straight back to my mom’s kitchen and the joy of knowing I was going to bed with a full belly. It’s budget friendly, it feeds a crowd, kids actually eat it, and the leftovers might be the best part.

A slice on leftover mashed potatoes, or between two pieces of toast for a meatloaf sandwich, is a delicious lunch the next day.

Ingredient Notes

Ground Beef – Lean (93/7) is what I use, with milk added for moisture. If you go with a fattier 80/20 chuck, you can skip the milk since the fat handles it. A beef and pork combo is excellent too, which is how my mom always made it.

Breadcrumbs – Panko or plain both work. They bind everything together, but more importantly they hold moisture. For an even more tender loaf, soak a slice or two of white bread in the milk, tear it up, and mix it in. I do this when making meatballs.

Worcestershire Sauce – Essential, and thankfully you don’t have to say it out loud to buy it. Don’t skip it, it adds depth and a little smoky flavor.

Meatloaf Seasoning – I make my own blend (recipe below) with Italian seasoning, garlic powder, onion powder, paprika, dried mustard, salt, and pepper. A good steak seasoning works in a pinch.

Glaze – Ketchup, brown sugar, and Worcestershire. It’s simple and it’s the part people fight over, so don’t skimp.

How To Make Classic Meatloaf

  1. Preheat the oven to 400°F and spray a loaf pan or 8×11 baking dish with cooking spray.
  2. In a large bowl, combine the ground beef, onion, panko, milk, eggs, mustard, Worcestershire, and meatloaf seasoning. Mix until just combined and then stop. Overmixing makes it tough.

  1. Press the mixture into your prepared pan.
  2. In a small pot, combine the glaze ingredients over medium heat until the sugar dissolves. Brush half the glaze over the raw meatloaf.

  1. Bake at 400°F for 30 minutes.
  2. Brush on the remaining glaze and bake another 25 to 30 minutes, until the internal temperature hits 160°F.

  1. Let it rest 2 to 3 minutes before slicing so the juices redistribute instead of running out onto your cutting board.

Homemade Meatloaf Seasoning

The blend is what pulls all the sweet and savory flavors together, and it beats grabbing a generic packet. Mix 2 tablespoons Italian seasoning, 1 teaspoon salt, 1 teaspoon black pepper, 1 1/2 teaspoons garlic powder, 1 1/2 teaspoons onion powder, 2 teaspoons paprika, and 2 teaspoons dried mustard.

Make a double or triple batch and keep it in a jar. Future you, standing over a bowl of raw ground beef at 5pm, will be very glad it’s already done.

It’s great on burgers too!

Storage & Reheating

Refrigerator: Cool completely, then store in an airtight container for up to 4 days.

Wrapping Tip: Use plastic wrap rather than foil directly on the meatloaf. The acid in the tomato glaze eats holes right through aluminum foil, which is an unpleasant surprise to discover later.

Reheat: Oven at 350°F until warmed through, or microwave in 1 minute intervals. My favorite method is a hot skillet with a little butter, 2 to 3 minutes per side, which crisps the edges and is genuinely better than the original.

Freezer: Freeze it cooked. Cool completely, wrap in plastic, then store in a freezer safe container for up to 3 months. Thaw in the fridge overnight and check the internal temp when reheating.

Make Ahead: Shape it up to 2 days in advance and keep it wrapped in the fridge, but leave the glaze off until baking. Set it out for 30 minutes before it goes in the oven so it cooks evenly.

Variations

Stuffed with Cheese: Layer slices of cheese inside as you form the loaf. It’s as good as it sounds.

Smoky BBQ: Mix Barbecue Sauce into the meat and use it in place of the ketchup in the glaze.

Italian Style: Add garlic and Parmesan to the mix, then top with marinara and mozzarella.

Taco Meatloaf: Use my Homemade Taco Seasoning in the mix and top with salsa. This is my favorite variation and it’s excellent on a Taco Tuesday.

Ground Turkey: Swap in turkey, but add a little extra breadcrumbs and milk since it’s much leaner.

What’s the Secret to a Moist Meatloaf?

It’s not one thing, it’s five, and dry meatloaf usually means at least one got skipped.

Get the fat ratio right. Lean ground beef (93/7) needs milk or broth added for moisture. Fattier chuck (80/20) brings its own and doesn’t need the help.

Don’t overmix. This is the big one. Working the meat too much makes it tough and dense. Add everything at once and mix until it just comes together, then walk away.

Use breadcrumbs. They bind, but they also hold moisture. Soaking white bread in the milk first is the next level version of this.

Add vegetables. Grated zucchini, bell pepper, or carrot add moisture and nobody will notice they’re in there.

Don’t overcook it. Pull it at 160°F and let it rest. Overcooking dries it out, and resting lets the juices settle back through the loaf instead of running out the second you slice it.

Does Meatloaf Have to Be Made in a Loaf Pan?

Nope. I use a loaf pan because I like the shape for sandwiches the next day, but you have options.

A casserole dish works as long as it’s deep enough to catch the fat. Mini loaf pans give you individual portions.

Meatloaf muffins are fun for kids and make portioning easy, and a mini muffin pan gets you meatloaf bombs that are basically meatballs with a glaze. You can also free form a loaf on a rimmed baking sheet, just make sure it has a lip so the fat doesn’t run into your oven.

Just know that cooking times shift a lot depending on shape and pan, so use a thermometer instead of the clock.

Ingredients

Meatloaf

  • 2 pounds lean ground beef
  • 1 cup sweet onion finely chopped

Instructions
