French Fry Casserole

French Fry Casserole is a fun, cheeseburger inspired comfort food dinner with a layer of seasoned ground beef, melty cheddar, and crispy golden fries baked right on top. Load it with all your favorite burger toppings after baking, from lettuce and pickles to ketchup and mustard. It’s budget friendly, kid approved, and make ahead friendly. Ingredient Notes

Frozen French Fries – Crinkle cut are my pick for the best crispy, sturdy texture. Any bag works though, and thin or shoestring fries crisp up extra fast.

Ground Beef – Lean keeps it from getting greasy. Ground turkey or ground pork or both great substitutes.

Steak Seasoning – My shortcut for that hamburger flavor. No steak seasoning? Use garlic powder, onion powder, paprika, salt, and pepper.

Condensed Soup – Cream of mushroom and cream of onion together make the creamy, flavor base. Sour cream or any cream based soup work as swaps.

Cheese – Sharp cheddar cheese is what I love on my cheeseburger. Use any cheese you’d put on a burger, or mix in pepper jack or a little blue cheese for a twist.

How To Make French Fry Casserole

  1. Preheat the oven to 375°F and spray a 9×13 pan with cooking spray. In a large skillet over medium heat, cook the ground beef with the steak seasoning until no longer pink. Drain the excess liquid if desired.

  1. Stir the condensed soups into the beef until combined. Remove from the heat and spread the mixture into the prepared pan.

  1. Layer the shredded cheese over the beef. Top with the frozen french fries in an even layer.

  1. Bake 30 to 40 minutes, until the fries are golden brown and crispy and the meat mixture is bubbly. Remove and garnish with hamburger toppings like shredded lettuce, diced pickles, onions, more cheese, or burger sauce.

Storage & Reheating

Refrigerator: Store leftovers in an airtight container for up to 3 days. Reheat in the microwave or a 350°F oven until warmed through, then pop it under the broiler for a minute or two to re-crisp the fries.

Make Ahead: Assemble the beef and cheese layers ahead and refrigerate, then add the fries and bake when ready so they come out crisp.

Freezer: Freeze it assembled. When reheating after freezing, cover with foil so the fries don’t cook too fast while the meat layer heats through, since the bottom takes longer.

Topping Tip: Always add the fresh burger toppings after baking, never before, so the lettuce and pickles stay crisp.

Tater Tots: Swap the fries for tater tots. My husband prefers them, so I make this version all the time.

Loaded: Top with bacon bits, cheese, and green onions for a loaded burger feel.

Taco Style: Use taco seasoned meat and a Mexican cheese blend, then add refried beans, nacho cheese sauce, or pico de gallo.

Different Cheese: Use a Mexican blend, pepper jack, or mix sharp cheddar with a little blue cheese for an interesting twist.
