It’s crazy how four basic ingredients work together to create something that tastes like you spent hours in the kitchen. The chicken comes out super tender, and the sauce is rich and creamy.

Perfect for those nights when you want to walk in the door to the smell of home-cooked dinner already waiting for you. Because sometimes the best recipes are the ones that practically cook themselves!

Ingredient Notes

  • Chicken – Boneless, skinless chicken breasts work best or substitute boneless chicken thighs or tenders.
  • Cream soups – Cream of chicken soup or try it with cream of mushroom or cream of onion.
  • Stuffing mix – I like the herb roasted stuffing mix or the cornbread stuffing mix. Don’t prepare it, use it dry.
  • Sour cream – Use low fat or fat free sour cream if desired. Or substitute plain Greek yogurt.

How To Make Slow Cooker Chicken and Stuffing

  1. Spray dish with cooking spray. Place the chicken breasts in the bottom of a crock pot.

  1. Mix the cream soup and the sour cream and pour it over the top of the chicken. Spread into an even layer.

  1. Sprinkle the stuffing mix over the top in a single layer.

  1. Cover and cook on low 4-5 hours or on high for 2-3 hours until the chicken is cooked through.

Storage & Reheating

If you have any leftovers, store them in an airtight container in the fridge for up to 4 days.

Reheat in the microwave at 1 minute intervals or in the oven at 350F until heated through. If it gets a little dry, add a splash of chicken broth.

Serving Suggestions

The creamy chicken can be a little rich, so I like to serve it with some roasted vegetables and a crisp green salad.

Of course you can also serve this over rice or mashed potatoes to soak up all that delicious sauce.

Oven Method

If you don’t want to make it in the slow cooker, you can always just layer everything in a casserole dish and bake at 375F for 45 minutes.

You might need to add a little chicken broth over the top and cover with foil while it cooks. This will seal in the moisture as it cooks, like the crock pot does.

Frequently Asked Questions

Can I use frozen chicken?

Yes, you can, but you will need to increase the cooking time slightly. Possibly 1 more hour. You can also make this with pork tenderloins or pork chops. I love making pork in the slow cooker because it gets so tender. Here is my favorite recipe for crock pot pork chops.

Do I have to cook the stuffing first?

No you don’t. That’s why this recipe is so easy!

Can I add vegetables?

This is a great recipe to add in some vegetables. I like some sliced carrots or green peas.

Can I double the recipe?

If you need more chicken, you can always double the recipe. Just be sure to use a larger slow cooker and you might need additional cooking time.

Ingredients

  • 4 chicken breasts boneless, skinless
  • 10.5 ounces cream of chicken soup
  • 6 ounces stuffing mix not prepared
  • 1 cup sour cream

Instructions

  • In a slow cooker, layer the chicken breasts on the bottom.
  • In a bowl, combine the soup and sour cream.
  • Spread over the chicken breasts.
