Cottage Potatoes are a cheesy potato casserole with tender diced potatoes, bell pepper, and onion in a creamy sauce, topped with a crunchy golden cornflake crust. It’s a potluck classic made with pantry staples, easy to prep ahead, and always the first side dish to disappear. Perfect alongside turkey, pork chops, or meatloaf. Ingredient Notes
Potatoes – Russets are best for getting that creamy texture, but baby red or Yukon gold work too. Leftover baked potatoes are a great shortcut instead of boiling fresh.
Velveeta – May seem like a shortcut but it melts into the creamiest, smoothest sauce with no fuss. You can grate your own sharp cheddar or American cheese instead, but Velveeta keeps it foolproof.
Bell Pepper – Red bell pepper adds color and a little sweetness. Green works if that’s what you have.
Onion – A sweet onion like Vidalia is the best option in my opinion, but you can use white or Spanish onion.
Cornflakes – This makes the crunchiest topping and they toast us golden brown with the melted butter. Substitute crushed buttery crackers in a pinch.

How To Make Cottage Potatoes

- Preheat the oven to 350°F and grease a 9×13 baking dish. Place the diced potatoes in a large pot and cover with water by 1 to 2 inches. Boil over medium high heat for 6 to 8 minutes, until fork tender. Drain and set aside.

- In a large bowl, combine the bell pepper, sweet onion, Velveeta cubes, and garlic powder. Stir to combine.

- In the prepared dish, layer half the potatoes and cover with half the cheese mixture. Repeat with the remaining potatoes and cheese mixture. Combine the melted butter and milk in a small bowl and pour it over the potatoes.

- Top with the crushed cornflakes. Cover tightly with foil and bake 30 minutes. Uncover and bake another 15 minutes, until bubbly and the cornflakes are golden brown. Let cool slightly, garnish with parsley, and serve.

Refrigerator: Store leftovers in an airtight container for 3 to 4 days. Reheat in the microwave or a 350°F oven until warmed through.
Make Ahead: Assemble without the cornflake topping, cover, and refrigerate up to 24 hours. Add the topping and bake when ready, adding about 10 minutes if it’s going in cold, straight from the fridge.
Freezer: Bake, cool completely, wrap in plastic and foil, and freeze up to 3 months. Thaw overnight, add fresh cornflake topping, and bake.

- 16 ounces Velveeta cheese cubed
- 1 teaspoon garlic powder
- ½ cup milk
- ½ cup butter melted
- 2 cups cornflakes crushed lightly
