Ingredient Notes

Hash Browns – Frozen shredded hash browns are the secret to a creamy soup with no fuss. Because they are small, they melt right into the broth. Refrigerated ones work too, and you’ll need about 2 pounds.

Ranch Seasoning – One packet of ranch dressing mix does a lot of the flavor work here. No packet? My Homemade Ranch Seasoning works perfectly (use 2 tablespoons for one packet).

Cream Cheese – Bring it to room temperature, then cube it. Stir it in at the end for that super creamy texture. Regular, low fat, or fat free all work.

Cheese – Grate your own sharp cheddar cheese because it melts the best. Bagged shredded cheese has anti-caking powder in it to keep it from sticking and can make the soup grainy.

Bacon – Cook and crumble real bacon, not the jarred crumby bits. Half goes in the soup the save the other half for a topping.

How To Make Crack Potato Soup

  1. In a slow cooker, combine the frozen hashbrowns, chicken broth, cream of chicken soup, ranch seasoning, and half the bacon.

Storage & Reheating

Refrigerator: Store any leftovers in an airtight container for up to 4 days. If the soup thickens too much, thin it with a little broth, milk, or water when you reheat it.

Ingredients
