Million Dollar Mashed Potatoes

Million dollar mashed potatoes are the creamiest, most delicious potatoes you’ve ever tried. The secret is an extra easy prep and a little cream cheese whipped in.

I know the usual way to make mashed potatoes is boiling them and stirring in some butter and milk at the end. And that is totally fine, but if you want to take them to the next level, try these!

Slow cooked in chicken broth and butter, the potatoes get a dose of extra flavor. Then you stir in some cream cheese to make them rich and creamy! It’s not the normal way, but once you try it this way, you won’t look back.

Not only that, but making them in the crock pot means your stove top is clear and you are free to do other things while they’re cooking. Perfect for the holidays when you have a ton of other things cooking at once. The slow cooker keeps them warm and ready to serve whenever you need them.

Enjoy these alone or serve them with buttermilk fried chicken, meatloaf, or Mississippi chicken. They are fancy enough for special occasions too like these million dollar deviled eggs and this million dollar dip.

Ingredient Notes

  • Potatoes – Russet potatoes are the best ones to use for mashing. Substitute red potatoes and leave the skins on for color and texture.
  • Broth – Chicken broth adds extra flavor but you can substitute vegetable broth or water. Just be sure to use the low sodium one.
  • Cream cheese – I like to use regular cream cheese, cut into cubes and softened. Swap it our for sour cream or plain Greek yogurt.

Best Potatoes To Use

Russet potatoes are my all time favorite because they make the lightest and fluffiest mashed potatoes. Red potatoes are great and Yukon Gold ones have a buttery flavor and color.

How To Make Million Dollar Mashed Potatoes

  1. Place diced potatoes, chicken broth, and half the butter in a slow cooker.

  1. Cover and cook on high for 4 hours. Carefully drain the potatoes and return to the crockpot and reduce temperature to warm.

  1. Add in the remaining butter, cream cheese, and milk. Mash using a whisk or a potato masher until you get the consistency you prefer.

  1. Turn to the warm setting. Season with salt and pepper and garnish with chopped fresh parsley or chives.

Storage & Reheating

Store any leftovers in the fridge for 3-5 days in an airtight container. Reheat in the microwave or on the stove top until heated through. If they are a bit thick, stir in a little broth or milk.

You can also make these ahead of time and freeze them for up to 3 months. Thaw overnight and reheat.

I only do this if absolutely necessary because they can get a little grainy when you thaw them. If this happens, stir in a little extra butter and milk.

Best Way To Mash Potatoes

There are a few different ways to mash potatoes. I prefer a potato masher, or potato ricer, but if you don’t have one you can use a sturdy whisk.

You might be tempted to use an electric mixer like a stand or hand mixer. They will get the job done but it’s very easy to over mix them.

When you whip potatoes you can activate the starch and they can come out gummy and thick, not light and fluffy like you want. Personally, a few lumps are a good thing!

Frequently Asked Questions

Do I have to use chicken broth instead of water?

You can use water but I think by using chicken broth you are giving the potatoes extra flavor. Substitute vegetable broth if you want to keep these vegetarian or vegan.

Can I substitute the cream cheese for something else?

I like to use cream cheese to add a creamy richness but you can leave it out, add plain Greek yogurt or sour cream, or just add more butter. You can’t go wrong with more butter 🙂

How many potatoes do I need?

One pound of potatoes feeds 2 people, maybe three if they aren’t super hungry. Two pounds of potatoes is perfect for a family of four. Think 1 large baking potato per person. The general rule is 4 ounces per serving but factor in potato peels and water weight once you drain them. I usually make a 5 pound bag when the whole family is over because I love leftovers!

Stove Top Instructions

Skip the crockpot and make these on the stove top. I like to use mine to keep my stove top clear for cooking other things but if I’m making these ahead of time, the stove top is fine.

The recipe is pretty much the same, just cook the potatoes, broth, and butter in a large pot. Bring to a boil and reduce to low and cook until the potatoes are fork tender. Drain and continue the recipe as usual.
