Biscuits and gravy casserole is the best of classic biscuits and gravy in one, easy to make dish! Fluffy biscuits, topped with creamy sausage gravy, scrambled eggs, and melted cheese for the ultimate breakfast comfort food that everyone will love.

This yummy casserole is like having an entire breakfast all in one dish. Spicy sausage, tender biscuits, creamy gravy, and fluffy eggs all baked together into a delicious dish. Each bite is full of all the classic breakfast flavors you crave without any of the fuss of making everything separately.

Not only is it easy to make but everyone in the family will love it. Even the kids and those picky eaters. There’s something about biscuits and gravy that just makes everyone happy, especially when it’s all baked together with gooey cheese on top!

This casserole is perfect for busy mornings, lazy weekend brunches, and if your family is anything like mine, breakfast for dinner is always a hit.

Best of all, you can prep it the night before and mornings are even easier! Especially those busy holiday mornings like Christmas and thanksgiving.

Just like my french toast casserole, cream cheese sausage balls, and sausage hashbrown casserole, it’s perfect for feeding a house full of hungry guests.

Ingredient Notes

  • Biscuits – Use your favorite refrigerated, canned biscuits or biscuit dough. I like the buttermilk ones or the Grands with buttery layers. Don’t use frozen biscuit dough. It won’t turn out right.
  • Sausage – Ground breakfast sausage is perfect. I love the spicy or the maple flavored one. Use your favorite! You can also substitute turkey sausage or ground beef.
  • Cheese – Shredded sharp cheddar is perfect for this! Substitute Monterey Jack or mozzarella cheese if you prefer.

How To Make Biscuits And Gravy Casserole

  1. Preheat the oven to 350F. Cut each biscuit into 4 pieces and layer them in the bottom of a greased casserole dish.

  1. In a skillet over medium heat, brown the pork sausage until no longer pink.

  1. Remove one cup of the cooked sausage and sprinkle it over the cut biscuits.

  1. In the skillet, add the butter and sprinkle the flour over the remaining sausage. Stir to coat it and make a roux.

  1. Slowly pour in 1 cup of milk while stirring until it thickens and a gravy forms. Remove from the heat and set aside.

  1. Sprinkle half the cheese over the sausage and biscuits. Spread the gravy over the cheese.

  1. In a bowl, combine the eggs and the remaining 2 cups of milk. Pour over the gravy mixture. Top with remaining shredded cheese.

  1. Bake in the oven for 25-30 minutes or until the eggs are set. I like to start checking about 20 minutes in. Remove and let cool for a few minutes before cutting.

Serving Suggestions

For breakfast, I like it with these blueberry bisquick pancakes, with some crispy bacon and fresh fruit.

For brunch or dinner as a main dish, serve it with hashbrown casserole, green beans, or a salad. Finish it off with this healthy coffee cake for dessert!

Storage & Reheating

Store any leftovers you might have in an airtight container, in the fridge, for up to 4 days.

Reheat in the microwave or in a 350F oven until heated through.

Prep Ahead

You can make this a few days ahead of time! Prep everything and assemble it. Cover with plastic wrap and keep in the fridge for up to 2 days.

When you’re ready to enjoy it, take it out of the fridge for about 15 to take the chill off and then bake as usual.

Can I freeze it?

This is perfect for making ahead of time and freezing it for when you have a breakfast emergency. Bake it and freeze, wrapped tightly with plastic wrap and aluminum foil. Thaw overnight in the fridge and bake as usual.
To make things easier, portion it into individual servings, and freeze. Then you will have an easy breakfast on busy mornings. Just reheat them in the microwave on 50% power for 2-3 minutes or until warmed through.
To reheat, remove from the freezer and reheat in the microwave on 50% power for 3-4 minutes until warmed through.

Ingredients

  • 16.3 ounces canned biscuits I like the buttermilk layers one!
  • 1 pound breakfast sausage ground
  • 2 cups cheddar cheese shredded
  • 6 large eggs
  • 3 cups milk divided
  • ¼ cup butter
  • ¼ cup flour
  • 1 teaspoon pepper
  • ½ teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  • Preheat oven to 350F. Spray a 9×13 casserole/baking dish with nonstick spray. Set aside.
  • Cut biscuits into quarters and place in a single layer in the baking dish.
  • In a medium sized bowl, combine the eggs and 1 cup of milk. Whisk to break up eggs and mix with the milk.
  • In a large skillet, cook sausage until browned and no longer pink in the middle.
  • Remove and drain on paper towels.
  • Sprinkle 1 cup of the cooked sausage over the quartered biscuits in the pan.
  • Top with 1 cup shredded cheddar cheese.
  • To the pan with the sausage drippings, add the butter and melt over medium heat.
  • Sprinkle in the flour, stir to combine, and cook 2-3 minutes to remove the raw flavor.
  • Stir in 2 cups milk.
  • Continue stirring until gravy thickens.
  • Remove from heat and stir in the spices and remainder of cooked sausage.
  • Pour over the cheese, sausage, and biscuits in the casserole dish.
  • Next, pour the egg and milk mixture over the gravy.
  • Top with remaining cup of cheese.
  • Bake in the oven for 25-30 minutes or until eggs are set.
