Notes
Start low
: Keep the oven below 300°F (prefer 250°F to 275°F) so nuts don't cook too fast and they toast all the way through.
Go slow
: Start with 10 minute increments, stirring each time. Proper toasting takes patience but creates more flavor
Salt while hot
: Add salt right after removing from oven while oils are still warm so it sticks to nuts.
Buy in bulk
: Purchase pecan halves in bulk at Costco or the market and save money. Buy whole or halves and chop as needed.
Use quality butter
: High quality unsalted butter tastes best and has less water. Substitute avocado oil or coconut oil for neutral flavor.
Separate by size
: Make small foil trays to remove smaller nuts while leaving larger ones in longer.
Store properly
: Refrigerate in an airtight container for one month. Freeze for 3 months. Vacuum seal for 6 months or more.
Toast in bulk
: Perfect for holiday baking season. Toast once and use for weeks in multiple recipes.
