Ingredients

package mixed salad greens

black beans
drained, rinsed

red bell pepper
seeded & diced

red onion

cherry tomatoes

peeled, pitted, diced small

fresh cilantro
chopped

Cotija cheese
for garnish
lime wedges

Salad Dressing
½
cup
ranch dressing
or sour cream
⅓
cup
salsa

tablespoons
lime juice
juice of 1 lime
Instructions
Combine all salad ingredients in a large bowl.
In a small bowl, mix dressing ingredients.
Drizzle dressing over salad, toss to coat.
Garnish with more cilantro, lime wedges, and cotija cheese.
