Ingredients
1
pound
fresh radishes
1
tablespoon
olive oil
2
cloves
garlic
1
teaspoon
kosher salt
1
teaspoon
black pepper
1
teaspoon
lemon juice
½
teaspoon
crushed red pepper
1
tablespoon
parsley
chopped
Instructions
Cut the radishes in quarters.
Toss in olive oil, minced garlic, lemon juice, red pepper, salt, and pepper.
Roast at 400F for 25 minutes.
When fork tender, turn broiler to high.
Broil for 2 minutes or until crispy.
Toss with parsley and serve warm!
Notes
Cut the radishes into even sizes so they roast at the same rate.
Roast them cut side down for the best golden, caramelized edges.
Use high heat and don't crowd the pan, or they'll steam instead of roast.
Add the fresh herbs after roasting so they stay fresh.
Watch the garlic so it doesn't scorch, and toss it in partway through if needed.
