Cornstarch Slurry Recipe

Ingredients

cornstarch
Instructions
Whisk the water into the cornstarch.
Continue whisking until smooth.
Slowly pour the cornstarch slurry into your hot liquid or sauce that you are thickening.
Whisk constantly until it reaches the desired consistency.
Notes
Add the liquid to the cornstarch, not the reverse. Fewer lumps that way.
Whisk until completely smooth before it goes anywhere near your sauce.
Add the slurry gradually. You can always add more, but you can't un-thicken a sauce.
Whisk constantly while pouring it in so it distributes evenly instead of clumping.
Add it at the end of cooking, not the beginning, or it'll break down.
