Ingredients

frozen potatoes O’Brien
or frozen diced potatoes with peppers and onions
2.75
ounces
country gravy mix
4
cups
chicken broth
Instructions
In a large pot over medium heat, add the potatoes, broth, and gravy mix.
Stir to mix.
Bring to a boil and reduce to a simmer.
Cook for 20-25 minutes or until soup thickens.
Remove and enjoy!
Notes
Stir the gravy mix in dry, straight from the packet, so it thickens the soup as it cooks.
Use frozen potatoes with peppers and onions to skip all the prep.
Blend or mash some of the potatoes if you want a creamier, smoother soup.
Thin with a splash of milk or cream if it gets too thick.
Load it up with baked potato toppings like bacon, cheese, and green onions.
