Homemade Mexican Pizzas are an easy recipe to make that will keep you from making a trip in the car. The layers of crispy tortillas, spicy pizza sauce, creamy beans, and all the melty cheese you can handle!
Preheat oven to 400F. Prepare a baking sheet with aluminum foil or parchment paper.
In a large skillet over medium high heat, brown the ground beef. Drain and return pan with meat to the stove. Pour in the water and add the taco seasoning. Stir to combine.
Bring to a boil and then reduce to a simmer. Simmer for 5-7 minutes or until the meat mixture starts to thicken. Remove from the heat.
In a separate skillet, heat over 1 tablespoon of oil over medium heat.Add 1 tortilla and cook for roughly a minute to crisp up and get the tortilla a light golden brown.
Remove to a paper towel lined plate. Continue with remaining tortillas, adding more oil as needed. (I used 1 tablespoon per 2 tortillas but you might not need as much.)
When all the tortillas are crisped up, it’s time to assemble the pizzas.
Place 4 tortillas on the prepared baking sheet. Spread with a layer of refried beans.
Spread with layer of seasoned ground beef. Sprinkle with ¼ cup of cheese. Top with a second tortilla. Spread with enchilada sauce.
Sprinkle with diced tomatoes. Cover with remaining cheese.
Bake for 8-10 minutes or until the cheese is melted. Remove and garnish with sliced black olives and green onions. Cut into 4 wedges and serve!
Notes
If you can't find the Mexican blend try a three-cheese blend.
You can use corn tortillas but they will not taste the same so I prefer to use flour.
Low carb and Keto tortillas work well and make this recipe a great low carb treat.
