These delicious Sloppy Joe Cups are made from refrigerated biscuits or cornbread muffins that have been filled with sloppy joe meat, topped with cheese, and baked to perfection!
Preheat the oven to 375° and spray muffin tins with cooking spray. Set aside.
Cook the ground beef in a large skillet until no longer pink. Drain fat if desired.
Stir in the garlic powder, onion powder, ketchup, beef broth, Worcestershire sauce, brown sugar and mustard. Cook till hot and bubbling. Remove from the heat.
Open the can of biscuits and gently roll or press a biscuit flat to make it slightly larger. Press into the muffin cup making sure to press down into the edges of the cup to avoid bubbles. Repeat with the remaining biscuits.
Fill each muffin cup with sloppy joe meat and sprinkle with cheese.
Bake for 18 to 20 minutes or until the meat is bubbling and the biscuits are light golden brown.
Remove the muffins from the pans and serve warm.
Notes
You can wait and add cheese to the cups toward the end of the baking time or fresh and hot out of the oven.
If you want them a little sweeter, the Cornbread muffins taste delicious. If you prefer more savory, use any biscuit that you like.
For some extra veggies, add some finely diced bell peppers or mushrooms to your sloppy joe mixture.
