When I think of comfort food, I think of the humble grilled cheese sandwich.  They are a staple all year round, but for me, they always seem to bring back memories of winter.  Being from Florida, we considered it winter when the thermometer dipped below 70F for more than 48 hours.  

Everyone bundled up and started hoarding firewood and bottled water like we were expecting the next ice age.  When it got cold, moms all over the country pulled out the canned tomato soup and made grilled cheese.  If those moms were busy, the meal was easy enough that we, the kids, could make it.

I tried making a grilled cheese in the microwave once.  I wouldn’t recommend it.  It was almost as disastrous as the time I made Poptarts in the microwave.  

Thank god for burn cream… I have tried making them many different ways.  Toaster, microwave, oven, griddle, etc., and the easiest way to make them, I believe, is the griddle.

Bonus because you can make at least 8 at a time.  You can never eat just one anyway:)

Gather your humble ingredients!

What is the next twist on grilled cheese?  I am officially starting a trend today and making bite-sized sandwiches.  I am making a grilled cheese sandwich, cut it into squares, put them on fancy toothpicks, and serve them up.  I put them on cute little forks last week and when I took them to a party, I warmed them in the oven for a few minutes.

The forks melted a little and looked like they were in a Salvador Dali painting.  Stick with the toothpicks:) They are going to go great with my Grilled Tomato Soup that I’m making next week!  Stay tuned…

These spicy grilled cheese skewers are perfect by themselves or dipped in a comforting soup!  Also great for the kids!

Grilled Cheese Skewers

Yield: 9 skewers
Prep Time: 5 minutes
Cook Time: 5 minutes
Total Time: 10 minutes

Grilled cheese sandwiches just turned into adorable yet tasty finger food!  These Spicy Grilled Cheese Skewers are perfect for soup and the kids!

Ingredients

  • 6 slices of french bread
  • 2 tablespoons butter
  • 3 slices Pepper Jack cheese
  • toothpicks for serving

Instructions

  1. Warm up your griddle or griddle pan (375F if using a griddle)
  2. Spread butter on one side of all your bread slices.
  3. Place three bread slices, butter side down on the griddle.
  4. Add cheese to each slice.
  5. Top with remaining bread slice, butter side out.
  6. Cook and flip when the bread is toasted to your liking.
  7. When both sides are toasted and cheese melted, remove to cutting board.
  8. Cut into 6 squares and stack two per toothpick.
