Homemade Mexican Pizzas

Homemade Mexican Pizzas are an easy recipe to make that will keep you from making a trip in the car. I tested it 10 times before getting it right! The layers of crispy tortillas, spicy pizza sauce, creamy beans, and all the melty cheese you can handle.

Taco Bell Homemade Mexican Pizzas

I know you are all familiar with Taco Bell’s Mexican Pizza and how delicious they are. They are my favorite when I make a run to get some late night snacks, I always grab one or two of these.

​Brooks and I split these and add in a few tacos to round it out. But as much as we crave these, I don’t like to run out every time I have the cravings. Which is quite often!

​So, in trying to save money and time and driving late at night, I decided to make them at home. Don’t worry, it’s much easier than you think!

Ingredients Needed

Tortillas – Taco size flour tortillas, roughly 6 inch size.

Ground beef – Lean ground beef or ground turkey.

Seasoning – Homemade taco seasoning gives the best flavor in my opinion or use your favorite brand.

Sauce – Red enchilada sauce is perfect here. Or substitute a spicy pizza sauce.

Cheese – I like a Mexican cheese blend or you can use sharp cheddar cheese.

Beans – Refried beans or refried pinto beans.

Toppings – Diced tomatoes, sliced black olives, and green onions

Kitchen staples – Vegetable oil, water.

How to Make Homemade Mexican Pizza

First: Preheat oven to 400F. Prepare a baking sheet with aluminum foil or parchment paper.

Second: In a large skillet over medium high heat, brown the ground beef. Drain and return pan with meat to the stove. Pour in the water, add the taco seasoning, and stir to combine.

Bring to a boil and then reduce to a simmer. Simmer for 5-7 minutes or until the meat mixture starts to thicken. Remove from the heat.

Third: In a separate skillet, heat over 1 tablespoon of oil over medium heat. Add 1 tortilla and cook for roughly a minute to crisp up and get the tortilla a light golden brown.

Remove to a paper towel lined plate. Continue with remaining tortillas, adding more oil as needed. (I used 1 tablespoon per 2 tortillas but you might not need as much.)

Fourth: When all the tortillas are crisped up, it’s time to assemble the pizzas.

Place 4 tortillas on the prepared baking sheet. Spread with a layer of refried beans. Spread with layer of seasoned ground beef. Sprinkle with ¼ cup of cheese.

Top with a second tortilla. Spread with enchilada sauce. Sprinkle with diced tomatoes. Cover with remaining cheese.

Fifth: Bake for 8-10 minutes or until the cheese is melted. Remove and garnish with sliced black olives and green onions. Cut into 4 wedges and serve!

Favorite Toppings

How long do they last?

If you happen to have any leftovers, you can wrap any leftovers in plastic wrap or in an airtight container. Place in the fridge for up to 2 days.

Reheat in the oven or in an air fryer until warmed through.

Can you make them in advance?

I wouldn’t make and assemble them more than 1 hour before eating. The crispy pizza can become soggy. The best option, if you are wanting to make a bunch of them, is to prep. 

Heat up the ingredients, make the meat mixture, and chop the toppings. Then keep them in separate containers until ready to assemble and serve.

What is the Mexican Pizza crust made of?

The original is made from a special flour tortilla. Once they are fried or baked and made super crispy, the pizza is topped with all the deliciousness you can think of.

Of course, we don’t have access to these so we make our own crispy pizza crusts out of flour tortillas and bake them until crispy.

Tapas Tips & Tricks

  • If you can’t find the Mexican blend try a three-cheese blend.
  • You can use corn tortillas but they will not taste the same so I prefer to use flour.
  • Great use of leftover taco meat.
  • Low carb and Keto tortillas work well and make this recipe a great low carb treat.
  • If hosting a pizza party, set up an assembly line and a bar of your favorite taco toppings.
