I’m always looking for something new for lunch. Driving kids around, running errands, grocery shopping, all take a toll on my tummy and I really don’t want to stop at another drive-thru to get a greasy burger. Being a mom has taught me many things, but one of the most useful things I have learned is to always have a cooler in your car. You never know when you will be stuck at a sports practice, waiting in line at the bank, or in between school pick-ups. You never know when you will need a snack, bottle of water, or need a cool place to store your groceries when you have an unplanned grocery stop.
The salad I am going to show you is perfect for packing in the car and is full of protein to keep you going through the afternoon slump.
I first found Sprouts when I was on vacation with my hubby last year. Loved it! I came home with about 8 pounds of chia seeds. They are half the price I normally pay and I was eating them like they were the last food on Earth. Needless to say, airport security thought I was nuts…
But I have fallen in love with them because they carry great meats, organic veggies, and healthy foods that are convenient for on the go people like me!

Crab, creamy avocado, and Goddess dressing make a quick crab and avocado salad topping for crunchy and nutty multigrain tortilla chips! Serve this quick dish as an appetizer or your lunch!
8 ounces crab meat (I used claw meat)
1/2 cup red onion (diced fine)
1 tablespoon jalapeno (seeded, diced fine)
juice of 1 lime (1 tablespoon)
1 ripe avocado (diced small)
1 teaspoon salt
1 teaspoon pepper
1/4 cup Goddess Dressing
1 bag Multigrain Tortilla Chips
Mix all the ingredients, minus the chips, in a bowl.
Chill until ready to eat.
Serve with multigrain chips.
