I’m always looking for something new for lunch. Driving kids around, running errands, grocery shopping, all take a toll on my tummy and I really don’t want to stop at another drive-thru to get a greasy burger. Being a mom has taught me many things, but one of the most useful things I have learned is to always have a cooler in your car.
You never know when you will be stuck at a sports practice, waiting in line at the bank, or in between school pick-ups. You never know when you will need a snack, bottle of water, or need a cool place to store your groceries when you have an unplanned grocery stop.
The salad I am going to show you is perfect for packing in the car and is full of protein to keep you going through the afternoon slump.
I first found Sprouts when I was on vacation with my hubby last year. Loved it! I came home with about 8 pounds of chia seeds. They are half the price I normally pay and I was eating them like they were the last food on Earth. Needless to say, airport security thought I was nuts…

Goddess Crab and Avocado Salad on Multigrain Chips
Crab, creamy avocado, and Goddess dressing make a quick crab and avocado salad topping for crunchy and nutty multigrain tortilla chips! Serve this quick dish as an appetizer or your lunch!
Ingredients
- 8 ounces crab meat (I used claw meat)
- 1/2 cup red onion (diced fine)
- 1 tablespoon jalapeno (seeded, diced fine)
- juice of 1 lime (1 tablespoon)
- 1 ripe avocado (diced small)
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/4 cup Goddess Dressing
- 1 bag Multigrain Tortilla Chips
Instructions
- Mix all the ingredients, minus the chips, in a bowl.
- Chill until ready to eat.
- Serve with multigrain chips.
