Creamy Corn Dip (Crock Pot Recipe)

Creamy Corn Dip with a hint of jalapeño that you can make in your crockpot? Who doesn’t need this in their life?!?

Hot Corn Dip Recipe

This dip smells so good while it’s cooking that you are tempted to walk by and grab a spoonful. Do not do that as it is HOT!

Trust me, I did it and my tongue is numb, but I did go back for another taste before putting the lid back on.

A few other dips I like to eat before they cool down are my Cheesy Pizza Dip and my Frito Pie Skillet Dip. Super tasty and cooked and served in the same pan!

What is Corn Dip made of?

Corn – Use fresh or frozen corn for best results

Cream Cheese – Feel free to use full fat, low fat, or reduced fat version. Bring to room temperature before adding to crockpot for easier mixing.

Jalapeno – I like to use fresh jalapeno, seeded and ribbed. But feel free to use pickled if that is all you have.

Milk – Use your favorite milk. I used whole milk for this recipe but you can use any % that you prefer.

Spices – Salt, black pepper, and garlic powder are all that is needed.

Garnishes – I like to garnish mine with sliced green onions but feel free to use parsley or cilantro.

How to make Hot Corn Dip

First: Combine all the ingredients in a crock pot. Turn the crockpot on high and cook for 1 hour.

Second: Stir and cook for another 30 minutes.

Third: Stir again and turn the temperature to warm. Keep warm while serving.

Can I make this dip in advance?

You can cook this dip ahead of time. Remove from the crockpot and cool completely. Store in the refrigerator for up to 3 days.

To reheat, place back in the slow cooker and turn on low until it’s easy to stir.

I do not recommend freezing this dip.

How long is it good for?

The dip will keep on warm for about 3 hours before it starts to dry out. If you only have the low setting it will only last about 2 hours. Be sure to stir it often.

Of course, it might not last that long.

Can I make it in the oven?

Of course you can. Combine the ingredients in a large bowl. Spread the mixture into a casserole dish or other oven safe baking dish.

Bake at 350F for 15-20 minutes or until bubbly and heated through. Remove from the oven and serve.

Variations on Corn Dip

  • Corn: Use frozen, canned, or fresh corn. For more flavor try Mexicorn!
  • Cheese: Mix in some cheddar cheese or pepper jack cheese at the end. You can’t have it cheesy enough.
  • Heat: Add more jalapeno or even try pickled jalapeno peppers. I like a roasted poblano myself. A dash of hot sauce will work well too.
  • Flavors: Add in some chopped green chiles, black beans, chopped chipotle, and roasted red peppers for more color and flavor.
  • Spices: If you like a little smoky flavor, add some chipotle chili powder.

Ingredients

  • 4 cups white corn frozen, golden is fine too
  • 1 jalapeño seeded, chopped fine
  • 8 ounces cream cheese softened
  • 1/2 teaspoon garlic powder
  • 1/2 cup green onion sliced thin
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1 teaspoon pepper

  • Mix all the ingredient, minus the garnish in a crock pot.
  • Cook on high for 1 hour.
